1. SATTVIC Thai curry

Ingredients:

Paste⁣:

• 1⁄2 cup water⁣
• 2 teaspoons coriander seeds⁣
• 2 teaspoons cumin seeds⁣
• 1 inch coin galangal⁣
• 1 tablespoon powdered jaggery⁣
• 1⁄4 cup chopped lemongrass stalks⁣
• 1 teaspoon lemon zest⁣
• 10 kaffir lime leaves⁣
• 1⁄2 teaspoon black peppercorns⁣
• 1 small green chilies

Curry⁣⁣:

• 3 cups lightly boiled vegetables (such as carrots, broccoli, sweet potato, beans, and baby corn)⁣
• 1⁄4 cup chopped bell peppers⁣
• 11⁄2 cup thick coconut milk⁣
• 2 teaspoons lemon juice⁣
• 1 tablespoon rock salt⁣
• 2 tablespoons peanuts, roasted and crushed⁣
Brown rice, cooked⁣

PRE-PREPARATION

Blend 1 cup of coconut with 1 cup of water to get thick coconut milk, then straining it.⁣

METHOD⁣

1. To make the paste, combine all the ingredients in a blender and process until completely smooth.
2. Add the paste to a pan and cook on a low flame for 5 minutes.⁣
3. Add the lightly boiled vegetables and bell peppers to the pan, and stir well for 5 minutes.⁣
4. Turn the stove off. Add the coconut milk, lemon juice and salt to the pan. Stir well. Do not cook coconut directly over the stove.⁣
5. Crush the roasted peanuts, and add to the curry.⁣
6. Present alongside brown rice.
Substitution In case galangal is not available, use fresh ginger.

INGREDIENTS

Cheesecake
• 1 cup cashews, soaked⁣
• 3 tablespoons powdered jaggery⁣
• 1⁄4 cup water⁣
• 3 tablespoons lemon juice⁣


Ginger Crumble⁣
• 1⁄2 cup almonds⁣• 1⁄4 teaspoon ginger, grated⁣
• 1⁄2 tablespoon jaggery powder⁣
• pinch salt⁣
Garnish (optional)⁣
• microgreens⁣
• edible flowers⁣


Lime Gel⁣
• 1⁄4 cup cashews, soaked overnight⁣
• 1⁄4 cup powdered jaggery⁣
• 4 medium leaves of spinach⁣
• 1⁄2 tablespoon lemon juice⁣
• 1⁄2 tablespoon lemon zest (zest is⁣
prepared by finely grating the peel of a fresh lemon)⁣

METHOD⁣

  1. In a blender, combine all of the ingredients to make the cheesecake.
    Deep Freeze for 5 to 6 hours in the freezer. Slice the frozen treat into squares, circles, or triangles after removing it from the pan.

1 Tablespoon poppy seeds, soaked in water and drained⁣

4 Dates, seedless⁣
1 teaspoon powdered jaggery⁣
1/8th teaspoon rock salt⁣
1/8th teaspoon black pepper⁣

GARNISHING
Chopped Pistachio ⁣
Saffron⁣
Dried Rose Petals⁣


METHOD⁣
1. Place everything except coconut milk into a blender and blend until smooth.⁣
2. Add coconut milk and blend again.⁣
3. Let the drink cool in the refrigerator for a while. Garnish & serve.⁣
